Apple Turnovers
These apple handpies were delicious and very adorable. This was our first attempt at making these and we were very impressed that they turned out perfectly. They were much easier to make than we had anticipated. The smell of the apples cooking was divine.
Ingredients:
8 oz cream cheese (softened)
3/4 cup butter (softened)
1 egg (separated)
3 tbsp cold water
2 cup all-purpose flour
7 cups of tart apples (like Granny Smith)
1 cup sugar
2 1/2 tsp ground cinnamon
additional sugar to sprinkle on top
Directions:
1. In a mixing bowl, beat cream cheesse and butter until smooth.
2. Separate egg and refrigerate the egg white.
3. Beat the egg yolk and 2 tablespoons water into the cream cheese mixture.
4. Gradually beat in flour until well blended.
5. Shape pastry into a ball.
6. Cover and refrigerate for 1 hour.
7. Peel, core, and slice the apple into thin small pieces.
8. In a large skillet, toss apples with sugar and cinnamon.
9. Bring to a boil.
10. Reduce heat; cover and simmer for 10-15 minutes or until apples are tender.
11. Remove from the heat.
12. Turn the pastry onto a lightly floured surface.
13. Roll to 1/8 inch thickness; cut into 6-inch circles.
14. Top each circle with apple mixture.
15. Brush edges of pastry with water; fold pastry over filling and seal edges well.
16. In a small bowl, whisk egg white and a tablespoon water; brush over pastry.
17. Sprinkle generously with sugar.
18. Place on greased baking sheets and bake at 275 degrees for 18-22 minutes, or until golden brown.
19. Remove to wire racks to cool.
These make wonderful snacks and we think that they would be amazing served hot with vanilla ice cream.

Apple Cinnamon Muffins
This was our first attempt at making homemade muffins and they turned out beautifully. The domed perfectly and tasted great. It would also be easy to substitute a cup of frozen berries or anything else you like in place of the apples and cinnamon.
Ingredients:
2 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
3/4 cup white sugar
1 egg
1 cup milk
1/4 cup vegetable oil
2 apples
1 tablespoon cinnamon
1 teaspoon vanilla
Directions:
1. Preheat oven to 425 degrees F.
2. In a small bowl beat egg with a fork. Stir in milk, vanilla, and oil.
3. In a large bowl stir together the flour, baking powder, salt, cinnamon and sugar. Make a well in the center. Quickly mix in the liquid mixture with a fork. Do not over beat.
4. Peel, core, and grate 2 large apples.
5. Stir apples into mixture.
6. Line a cupcake pan with cupcake papers and fill each paper 3/4's of the way full.
7. Turn oven to 400 degrees F.
8. Bake for 45 minutes, or until golden.
9. Cool on a cooling rack.

Caramel Apple Salad
I love this treat when I'm eating healthy but still want something sweet. This dessert is simple to make and it is a crowd pleaser as well. It makes about 8 cups, provides some healthy servings of fruit, and makes a great snack. I love having it as part of a healthy lunch.
Ingredients
4 Large Granny Smith Apples
Small Box of Fat Free Sugar Free Butterscotch Pudding
Container of Fat Free Cool Whip
Can of Crushed Pineapples in its own Juice
Directions
1. In a large container with a lid mix the pudding mix with the pineapples.
2. Clean the apples. Core and chop them into bite size pieces. As you chop them mix them into the pinapple mixture. The acid from the pineapples keeps the apples fresh looking.
4. After all of the apples are mixed in add the cool whip and mix well. Refridgerate for several hours. Then enjoy! 
You will be surprised how many people will be asking how to make this wonderful treat.
